We made a surprise trip to my in-laws this weekend so my weekend items were never cooked.    We did a pretty good job using our leftovers and cleaning out the fridge before we left though!!    Small victories, right?

Monday – Baked Ziti w/Italian Sausage (thanks to Vanderbilt wife for participating in $5 Dinner Mom‘s bargain meal of the week!) with Garlic Breadsticks from my Publix score last week!

Tuesday – Leftover pasta

Wednesday – Ash Wednesday – Mac & Cheese

Thursday – Hamburgers, Baked Beans and some veggie DD can eat.

Friday – FISH STICKS!, Mashed Potatoes and LO veggies.

Saturday -Hamburgers (again)

Sunday – Homemade pizza (crust scored at publix with the breadsticks.   Yeehaw!)

    I completely understand. My daughter is 13 months old. I’ve really modified what we would normally eat to the best that is practical — boxed Mashed Potatoes and rice and other stuff we normally wouldn’t eat. Our camper is probably substantially smaller than yours and counter space is, well, non-existant. It makes even cutting veggies a PITA. I’ve found that the electric teakettle is great for boiling water, though. It’s also how we heat the water to give her baths. Do you homeschool or what makes you spend so much time in the motor home? Sounds like fun!!

    I found your blog through Orgjunkies Menu Plan Monday…I am thrilled to see taht you have menu’s and meal plans for being in a camper! We (a family of 6) spend about 1/3 of the year in a 29 ft. motorhome! When we were a family of 4, I did a lot of cooking when we were on the road but since having two more children close in age, I have gotten lazy about it and we eat out a lot more or just have the same things again and again to eat. I have just been thinking about how much I need to get back into cooking in the camper when we are in it. My biggest frustration is having a toddler and a crawling infant under my feet while trying to cook in a tight space. Even something as simple as boiling water on the stove or making soup can become hazardous! Sorry for such a long comment!
