make ahead breakfast casserole

I LOVE making casseroles and other oven baked goodies for Sunday breakfast because otherwise everyone else is finished eating before I even sit down!   I make this one a lot for brunches or potlucks.  It is a make-ahead casserole, making it great for company, too!

Ingredients

  • 6 eggs
  • 2 cups milk
  • 2 pieces white bread, chopped or torn into bits
  • 1 cup shredded cheddar cheese
  • 1 tsp dry mustard (DON”T OMIT — it gives a ton of flavor!)
  • 1/2 – 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 lb bulk sausage, cooked and drained (you can also substitute cooked bacon or ham cubes)

 

Method:

Grease a 9×13 cake pan (You’ve seen my tip for greasing pans, right?).  Slightly beat eggs, then stir in the rest of the ingredients.   Place in prepared cake pan.  Cover and refrigerate overnight.

The next day, preheat oven to 350 and bake for one hour.

    The Make Ahead Breakfast Casserole looks delicious. My only question is are you supposed to bake it in the oven COVERED or UNCOVERED? The recipe doesn’t clarify this.

    I think you could do it either way. I don’t cover it and it does get brown on top but not usually burnt. If you (or your kids) aren’t fans of brown/thick tops, you may want to cover.
