I love summer!   Not only do I like the warmer weather, but even the apples are pretty icky by this time of year.  I love making fresh fruit salad and having super fresh-seasonal produce.  First up (in summer, anyway) are raspberries.  Here are some of my favorite ways to use up the raspberry harvest!

Eating

I got this awesome Lemon-Raspberry Crumb Muffin recipe from a book I reviewed last year.  Sooo yummy!

 

This raspberry smoothie looks yummy.  And it’s pretty clean, too.

I love this recipe for raspberry limeade.  I shared a ton of lemon-based drink recipes this spring, but none for limeade.  I can’t wait to try this one!

This drink recipe using sherbet and raspberry juice (I would use whole raspberries, myself), looks fabulous!

 

 

I love baked goods and these don’t have much dairy so I might have to give them a try on a cooler day.  That’s what the toaster oven is for, right?

 

 

This recipe looks super rich, but fabulous.  I can’t wait to try it after the baby starts eating solid foods — when I can eat a little dairy again.

 

Preserving

Like with the rhubarb, I don’t do much special to preserve my raspberries.  I washed them and drained them well.   Not well enough though. I would probably drain them on paper towel this year instead of just leaving them in the colander.   I spread them out in a thin layer on a cookie sheet lined with parchment paper and set them in the freezer to flash freeze.  Once they were hard, I double bagged them in gallon freezer bags.   Yum & done.
