So I haven’t really mentioned this yet, but I’ve started working for the family business again on a VERY small scale.  I aim for 6 hours a day, once a week.  Even though I work at home, on that day, however, I’m WORKING and not thinking about what I’m cooking for dinner — that’s not where my brain is.

Enter Leigh Ann’s new ebook 20 Minute Meals: Giving Weary Chefs Grace While Keeping Families Healthy.    Just the title causes a sigh of relief!    Leigh Ann shares 4 weeks of healthy meal plans complete with grocery lists.   It was super easy to just plug the recipes into Plan to Eat and combine them with the grocery list and plan for breakfast & lunch, too.

Not only does Leigh Ann provide recipes that can actually be done in 20 minutes WITH real foods (not processed and boxed foods) and are healthy, but she provides some gentle reminders of why it might take you so long to cook dinner any other day.  Like mise en place (everything in it’s place — i.e. gathering things BEFORE you start) as well as other tips that might be obvious to someone less scattered than I.

None of the recipes in 20 Minute Meals have crazy fancy ingredients and most of the items I already had on hand.    I liked that she didn’t just share recipes and sides, but almost gave me permission to not have a 5-course meal every day.  They are SUPER simple, but tasty and I can totally see where this would be great in that first trimester slump where I don’t care if everyone eats cereal for a month, ya know?

The other thing I love is that Leigh Ann includes links to things that many people probably buy, but could make themselves.  Like taco seasoning.  I’ve made my own for years but wasn’t super fond of the recipe.  I’m loving hers!    With no microwave & no processed foods, it’s great for baby-stepping into real food without feeling like you need to spend hours making yogurt and kefir and your own bread :).   Talk about accessible food!!
