Everyone has their own chili recipe.  Some make it thick, my mom makes it thin, some make it spicy, some not so much.   I’ve had to make substitutions because of holes in my pantry and it’s just not as good as it is like this.  It’s FABULOUS for chili dogs or chili cheese fries- it’s thick, tomato-y and has a little kick (add less chili powder to make it more kid-friendly).

Ingredients:

* 1 lb. ground beef, browned
* 1 can diced tomatoes (14 oz.)
* 1 can Rotel (10.5 oz.)
* 2 cans tomato sauce (15 oz.)
* 1 can or 2 c. kidney beans
* 1 medium onion, chopped fine
* 1-2 tsp. garlic, chopped
* 3-4 tsp. chili powder
* 1/2 tsp. cumin
* garlic powder, dash

Directions:

In dutch oven (6 qt pot), brown ground beef with onion and garlic. When meat is browned, add tomatoes, tomato sauce, Rotel, and kidney beans. Stir well and add chili powder, cumin, and garlic powder (if necessary).

Cook on medium-low for at least 1 hour to allow flavors to combine.
