Oh, yes I did!

I had completely intended to make this one of my baby freezer list recipes, but I was craving chocolate milk and made this and had to share.   It’s from Alton Brown (of Good Eats fame) and so of course it’s good!  I won’t tell you  that one year Bones bought me 6 seasons on DVD and every book he had out at the time.   Yeah, the good ‘ol days with disposable income.   Anyway…

You need:

  • 1 1/2 cups water
  • 3 cups sugar
  • 1 1/2 cups Dutch-processed cocoa
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 2 tablespoons light corn syrup

In a small pot (non-stick is easiest to clean; mine is hard-anodized aluminum and works fabulously!), bring water and sugar to a boil.   Add the cocoa, vanilla, salt and corn syrup.   Wisk until all solids have been removed.   Reduce sauce until slightly thickened and strain.  Cool to room temperature and pour into a squeeze bottle or jar.

Makes approximately 5 cups.

    Alton Brown rules. It’s like he actually knows what he’s talking about. I’ve made hot fudge before, but I love that this recipe doesn’t call for heavy cream, since it’s not something I tend to keep in the house. If I did, then I’d feel compelled to use it in everything. 😉

    Seeing as my family can go threw $12 worth of real maple syrup in one sitting, I regularly make pancake syrup:
