I finally found the perfect banana bread recipe.   The search is over!

I did have to modify it though, based on what was on hand.   The original can be found at My Kitchen Cafe.

Here is how I made it:

  • 1/2 c butter, softened
  • 1-1/2 c sugar
  • 2 eggs
  • 1 tsp vanilla (I always eyeball it and I KNOW it was more than 1/2 tsp)
  • 1 c mashed bananas
  • 2 Tblsp. vanilla yogurt
  • 1/2 c whole wheat flour
  • 1-1/4 c bread flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Cream butter and sugar together. Add eggs, bananas, buttermilk and vanilla. In a separate bowl mix dry ingredients. Add dry ingredients to banana mixture. Mix until combined. Divide batter into greased 8×8 or 9×9 pan and bake at 350 degrees for 50-55 minutes or until a toothpick comes out clean.

It was phenominal!!   It was moist net firm and not dry at all.    I can’t imagine how good the original must be, but since I never have buttermilk and have yogurt, this is good enough for me.
